Tradition dictates that winemaking operations should follow the law of gravity. It is also normally thought that the soil temperature is 15°C at a depth of 3 metres. For these and other reasons as well, we built this two-storey winery, roughly 22 metres high and 57 metres in diameter, inside a hill. As a result, the floors were circular, and the project became a healthy exercise in squaring the circle. The public entrance is on the west side, while the service entrance is opposite, to the east. The two floors of the winery are connected by a spiral ramp. Ventilation is resolved by a series of chimneys and skylights marking the top of the hill, inserted in an uninteresting, amorphous geographical context. As an exception, we decided that the restaurant would face towards the vineyards, creating a natural 'frame'. Porto, July 2022 Eduardo Souto de Moura
